Ingredients
1/4 cup Pearl Barley (uncooked, rinsed and drained)
2 cups Broccoli (chopped into florets)
250g Lean Ground Beef
1 tsp Moroccan Spice Blend
1/4 cup Hummus
2 tbsp Filtered Water
2 cups Baby Kale
1/2 cup Sauerkraut
Preparation
Step 1
Cook the barley according to the directions on the package. Set aside.
Step 2
Meanwhile, add the broccoli to a steamer basket over boiling water and steam for about three minutes or until desired doneness. Set aside.
Step 3
Preheat a non-stick frying pan over medium heat. Add the beef, breaking it up as it cooks. Add the Moroccan spice blend and continue to break up the beef. Cook for seven to 10 minutes or until cooked through. Set it aside.
Step 4
Whisk the hummus and water together.
Step 5
To assemble, divide the cooked barley, broccoli, beef, baby kale, and sauerkraut evenly between bowls or meal prep containers. Top with the hummus mixture. Enjoy!
