These 3 ingredient banana pancakes are naturally gluten-free, incredibly easy to make and perfect when you need a quick healthy breakfast. Made with just banana, eggs and baking powder, they're soft, fluffy and naturally sweet without any added sugar.

Ingredients:


1 medium banana (ripe, peeled)

2 large eggs, whisked

1/2 tsp baking powder

1 tsp butter (to grease the pan)


How To Make 3 Ingredient Banana Pancakes:


  1. Mash the banana in a bowl until most lumps are well mashed.

  2. Add the whisked eggs, and stir to combine.

  3. Add the baking powder and mix through.

  4. Melt the butter in a frying pan over medium heat.

  5. Add 1/4 cup pancake mixture to the pan, per pancake.

  6. Allow bubbles to form and pop on top of the pancake before flipping over (be careful with this, see video for how to flip the pancakes without them breaking). Cook until golden brown on both sides.

  7. Stack cooked pancakes on a plate and top with maple syrup (the real stuff!), sliced banana + Greek yoghurt
